Scotland the Bread launches new heritage flour
Scotland the Bread Community Benefit Society has just launched flour made from three varieties of wheat that have been grown here in the Scottish Borders for the first time in 100 years.
The group's website states, "These heritage wheats are more than a historical curiosity. Their superior nutritional profile and their suitability for agro-ecological farming make them a good starting point in our quest to select and develop bread grains that grow well in Scottish soils and can nourish healthy citizens while providing local farmers with a fair and reliable return."
The flour can be purchased at the group's website where discounts are available for members and supporters.
